CREATING EXCEPTIONAL COCKTAILS
Our Bar & Cocktail course is a comprehensive program that covers a variety of topics related to bartending and cocktail making. Participants will learn about the role and responsibilities of a bartender, the effects of alcohol on the human body, and the tools and equipment used in the bar industry. They will also gain an understanding of glassware and the bartender’s environment, as well as the breakdown of spirits and the art of cocktail making. Service excellence and tips for upselling will be discussed, as well as bar administration and procedures, including inventory management, cash handling, and legal requirements.
The course concludes with a cocktail practical and assessment/exam to test the knowledge and skills gained during the program, all participants who pass will walk away with a Certificate from the ZMMI Bar Academy. By the end of the program, participants will have a thorough understanding of the bartending industry, including customer service and creating delicious cocktails.
Having an incredible wine list is the first step to creating a great wine experience for your guests, but sometimes the wine list is just not enough. We offer wine training that focuses on the basics of wine, including: how wine is made and where wine service and how to upsell premium wines.
This knowledge not only helps them answer any questions that your guests may have, but also teaches them about the importance of food and wine pairing, and why certain wines work well in certain situations.

ZMMI is taking the wine culture of Zanzibar to the next level, training even the local staff that may not consume alcohol to be trade experts in delivering information about the wine list and products. We can train to upsell and take consumers on a wine journey that will create lasting memories.

Developing Wine Culture
Our wine course is a comprehensive program that covers a variety of topics related to wine. Participants will learn about the responsibilities of a wine waiter, the history of wine, wine regions, grape varieties, wine styles, the fundamentals of wine tasting, winemaking process, principles of wine and food pairing, wine service and storage, sparkling and fortified wines, and wine service in the hospitality industry. The course culminates in a final exam and review, all participants who pass will walk away with a Certificate from the ZMMI Bar Academy. By the end of the program, participants will have a solid understanding of wine, from production to service.
Our Key Account Managers are always on-call and happy to assist you in any way. We host some incredible events, from intimate wine evenings, tastings, music festivals, outdoor picnic’s and more.
We have our Annual Sip & Swirl event: a wine tasting designed to showcase some of our new products as well as our firm favorites.
Annual Boschendal picnic and of course the infamous Grape Escape sandbank wine event with Ken Forrester.
These visits often include wine tastings, wine training or paired gourmet dinners.
We collaborate on events with partners across Zanzibar and can also host events for team building and corporate events at our amazing Bar Academy and outdoor space at Migoz Plaza.

We firmly believe that exceptional beverage lists ensure increased sales and a better customer experience. With that in mind, we look at Menu Psychology, as well as using our knowledge of what works well on the island to ensure that you end up with the perfect Beverage List for your property, and then we will help you design and print it as well!
